Calluna vulgaris - the Latin name for heather. A resilient bloom that carpets the North Yorkshire Moors in soft hues of purple, thriving amongst the wild beauty of the landscape. At Saltmoore, Calluna takes its name and inspiration from the landscape that surrounds us. Rooted in a strong sense of place, it is an intimate dining experience shaped by the seasons, celebrating the ingredients, people and places of North Yorkshire.

A Taste of North Yorkshire

Led by Executive Chef Adam Maddock, Calluna centres around a carefully considered tasting menu that evolves with the seasons. Ingredients are drawn from our own kitchen garden and a close network of local growers, farmers, fishermen and producers, with each dish guided by what is at its best in that moment. From garden and coast to field and moor, the menu tells a story of North Yorkshire through creativity, precision and a deep respect for the ingredients themselves.

An Evening at Calluna

With just 24 covers each evening, Calluna is designed to feel intimate, considered and unhurried. There are no table turns. Instead, the evening unfolds at its own pace, giving you time to experience the full tasting menu and everything that accompanies it. For an alternative perspective, reserve our final seating at 20:00 and take a seat at the Kitchen Counter, a front-row view of the kitchen and the team behind each dish. Calluna is open Thursday, Friday and Saturday evenings. Opening 15th October 2026.

Calluna is a celebration of where we are. Our kitchen garden sits at the heart of our approach, alongside relationships with producers who share our respect for seasonality, quality and the landscape. As the garden changes, the coastline shifts and new ingredients come into their own, so does the menu. No season at Calluna is quite the same as the last. A dining experience shaped by nature and grounded in North Yorkshire.

Calluna is open on Thursday, Friday and Saturday evenings. Restaurant reservations are available between 18:30 and 19:30, with our Kitchen Counter experience available at 20:00.
Your evening begins in the Lounge Bar with a welcome drink, before moving to the Kitchen Counter, where your first two courses will be served. You will then be taken to your table to enjoy the remainder of the tasting menu.
The Kitchen Counter offers a closer look at Calluna, with a front-row view of Executive Chef Adam Maddock and the kitchen team at work. For our 20:00 seating, guests remain at the counter for the full tasting menu, making it an intimate and immersive way to experience Calluna. The counter can accommodate up to six guests seated together in one line.
Our restaurant is designed for intimate dining, with tables available for two or four guests. We can accommodate a maximum of two tables of four per service. For groups of five or six guests, we recommend booking the Kitchen Counter at 20:00, where up to six guests can be seated together.
Calluna serves a seasonal tasting menu led by Executive Chef Adam Maddock. The menu evolves throughout the year, guided by ingredients from our own kitchen garden, local suppliers and the surrounding North Yorkshire landscape.
Due to the nature and complexity of our tasting menu, we are unable to accommodate all dietary requirements. Please make us aware of any allergies or dietary requirements before booking so our team can advise whether we are able to accommodate them.
A 50% non-refundable deposit is required at the time of booking. Reservations may be rescheduled with a minimum of 48 hours’ notice, subject to availability.
Calluna is designed as an intimate, adult dining experience and is therefore not a child-friendly environment. For families dining at Saltmoore, we recommend The Brasserie or Pizzeria, where a more relaxed, child-friendly dining experience is available.
Yes. Calluna welcomes both hotel residents and non-resident guests.
Yes. Guests can combine dinner at Calluna with an overnight stay at Saltmoore. We recommend booking accommodation in advance, particularly for Friday and Saturday evenings.
Yes. The dress code at Calluna is smart casual. We invite guests to dress for the occasion while still feeling comfortable.
